The A.V. Club has a list of 15 Book-to-film adaptations that live up to the source material, and while it is good, I thought of a few more favorites that didn't make the bill.
Namely:
One Flew Over The Cuckoo's Nest
The Spy Who Came In From The Cold
Mystic River
The Quiet American
I'm sure I'm missing more greatness. Tell me what's on your list of great books that have been turned into great movies.
The Ice Storm was a great movie.

Was it a great book too? I did like the movie, but I didn't read the book (until you left this comment, I didn't even know it was based on a novel.)

I think "The Color Purple" from Alice Walker's book was a good movie adaption, with inspired casting. Also, "The Last of the Mohicans" with Daniel Day-Lewis as "le long carabine" was a great movie adaptation. Michael Mann directed and shot the film beautifully.

The Old Man and the Sea (Spencer Tracy - AWESOME)
